Thinking about it though, didn't Desmond die just before recording a new series?

I think (Not checked) He died after filming the Last episode but before it was shown...I'll check BBC Comedy guide...

Norman Beaton died on 13 December 1994, aged 60, while visiting the island of his birth, Guyana. C4 screened Beaton But Unbowed - A Tribute To An Artist six days later, immediately after what was already announced as the last ever episode of Desmond's. (Beaton But Unbowed was also the title of the actor's 1986 autobiography.)

Pretty much the same story with Father Ted. It had already been announced that the third series would be the last. Dermot Morgan died a day or two after filming ended.
